Polyphenols, also known as polyhydroxyphenols, are a structural class of mainly natural organic chemicals characterized by the presence of large multiples of phenol structural units. Polyphenols play an important role in the ecology of most plants, by regulating plant coloration, and also prevent microbial invasion.
