Eriodictyol is a natural flavonoid compound that belongs to the flavanone family, commonly found in citrus fruits and certain plants, such as lemons, oranges, and some traditional herbs. The chemical structure of eriodictyol is 2-(3,4-dihydroxyphenyl)-2,3-dihydro-5,7-dihydroxy-4-benzopyrone. It possesses a typical flavonoid structure, including two aromatic rings and a heterocyclic benzopyran ring. The molecular formula of eriodictyol is C15H12O6. It has poor solubility in water but dissolves well in organic solvents such as ethanol. Eriodictyol exhibits various biological activities, such as antioxidant, anti-inflammatory, and antibacterial effects. Its antioxidant, anti-inflammatory, antibacterial, anticancer, and cardiovascular protective properties make it highly promising in the fields of food, pharmaceuticals, and health supplements.
