Tannins are a class of abundant plant secondary metabolites. Structurally, tannins are generally divided into two major categories: hydrolyzable tannins (HTs) and condensed tannins (CTs). Hydrolyzable tannins can be separated into gallotannins and ellagitannins, composed of gallic acid or hexahydroxydiphenic acid esters linked to a sugar moiety. Condensed tannins (proanthocyanidins) are polymers of tricyclic flavanols connected by C-C bonds. The chemical structure of tannins is species-specific and exhibits very high variability, such that no two species may have the same tannin profile. Therefore, studying tannin chemistry can be highly challenging.
